Summer Berry Compote

Summer is officially here and with it comes beach days, dinners alfresco (hello beeswax tapers) and fresh berries. When my berries start to get over ripe I put them in the freezer and one of my new found ways to use them up is by making a compote.

Making compotes may sound overwhelming but they are simple, yummy and versatile! Traditionally used as a dessert, I typically use it on breakfast foods like chia seed pudding, overnight oats and pancakes.

 

This recipe from Minimalist Baker has been the one I (mostly) follow, though sometimes I cut out the oj when I don’t have any on-hand. And this one from Food52 is the perfect traditional recipe.
